中性子を利用した食品の構造物性分析

Structure and physical analysis of foods using neutron

中性子散乱は、食品のガラス転移やミクロ構造解析に有効である。また、同位体コントラスト法を用いることで、食品中の水分子の動的挙動を解析できる。本発表では、食品関連企業や農業関係者に中性子線を利用した食品構造物性研究の紹介をする。

Neutron scattering is useful for glass transition and microstructure analysis of foods. The isotope contrast method can also be used to analyze the dynamic behavior of water molecules in foods. In this presentation, we will introduce the study of food structural properties using neutron beam to food related companies and agricultural people.
